King prawns with sweet potato and coriander puree

Made this yesterday, halved the quantities.   We didn’t have raw prawns and I think it would have been more satisfying if we had used these.  Still, the vinegarette sauce was really good – quite sharp with all sorts of flavours.  The sweet potato puree is easy to make, just got to bake the sweet potato whole until it’s soft in the middle and scoop out all the flesh.

The prawns were the only major cost @ £2.99, the potato was only £0.35, I think all in all it was about £4, maybe £4.50.  If I made this again it would probably work quite well as a starter rather than a main meal.

It’s been a bit of a hectic week so will get back to normal service soon.
